We are seeking a skilled and passionate Pastry Sous Chef to join the Brooklands Kitchen Team at The Peninsula London. This role offers an exceptional opportunity to work in a high-profile flagship hotel in London, serving contemporary European cuisine under Michelin-starred Chef Director, Claude Bosi.Responsibilities:

Assist with planning and lead the pastry team, managing daily operations and supporting the Pastry Chef.Execute dessert, pastry, and baked menu items, ensuring the highest quality and consistency.Adhere to hotel policies and procedures, minimizing wastage without compromising food quality.Maintain hygiene and cleanliness standards in the kitchen, food production, and storage areas, ensuring food safety compliance.Ensure kitchen equipment is well-maintained to maximize its lifespan.Maintain up-to-date technical worksheets, recipes, and costings, and ensure team understanding and compliance.Supervise, manage, and guide the team, allocating work according to skill level, and plan training to foster growth.Possess extensive pastry knowledge, including classical and modern culinary trends, with a high level of creativity.Have good knowledge of suppliers and ingredients.Experience in a similar role within a restaurant or luxury 5-star hotel, with team management experience.Relevant culinary qualifications or certifications.Excellent time management and organizational skills, adaptable, and positive attitude.Strong communication skills, flexibility, and ability to work under pressure.About The Peninsula London:
