Key Responsibilities
Lead daily pastry service with attention to detail, pace, and presentation
Manage mise en place, prep systems, and section organisation
Train and mentor junior pastry chefs to uphold standards
Support the Head Pastry Chef with new menu development and tastings
Maintain food safety, allergen, and hygiene compliance (HACCP)
Assist with stock control, ordering, and cost efficiency
Candidate Profile
Experience as Pastry CDP or Pastry Sous Chef in fine dining or Michelin-level kitchens
Strong technical knowledge of plated desserts, classic pastry, and modern techniques
Organised, calm, and focused under pressure
Committed to excellence, teamwork, and refinement
Confident communicator who leads by example
Passion for seasonal produce, thoughtful presentation, and craftsmanship
