This is an exciting opportunity for a highly skilled sushi professional to contribute to one of Londons most prestigious dining destinations.The RoleAs a Senior Sushi Chef de Partie, you will take ownership of your section, preparing and presenting a diverse range of sushi and sashimi dishes with precision, creativity, and consistency. Working closely with the Head Chef and the wider kitchen brigade, you will uphold the highest standards of quality, food safety, and authenticity. The role requires strong leadership, the ability to train and inspire junior chefs, and a true passion for Japanese culinary traditions with a contemporary twist.Key ResponsibilitiesPrepare and execute sushi and sashimi dishes to the highest standards.Supervise and mentor junior team members in your section.Maintain impeccable standards of hygiene, HACCP compliance, and food safety.Ensure portion control and minimal waste while maximising quality.Collaborate with the Head Chef and culinary team on menu development.Contribute to the smooth operation of the kitchen during service.RequirementsMinimum 5 years of sushi experience, with at least 2 years in a senior role.Previous experience as a Senior Sushi Chef de Partie or equivalent in a luxury or high-volume restaurant.Strong knowledge of fish handling, sushi preparation, and presentation.Food Hygiene Level 3 certification (preferred).A hands-on leader with excellent communication and organisational skills.Ability to thrive in a fast-paced, high-pressure environment.Why Join Us?At Shanghai-Me, we pride ourselves on excellence, creativity, and passion.
