We are looking for a skilled and passionate
Butcher
to join the team at our prestigious 2 AA Rosette-awarded restaurant in Central London. This is a fantastic opportunity to be part of a dynamic kitchen focused on a "farm-to-fork" philosophy, where quality and sustainability are at the heart of everything we do.This role requires more than just breaking down meat. You will be responsible for the nose-to-tail butchery of whole animals, as well as using your creativity and expertise to produce a range of high-quality products.
Key Responsibilities:Breaking down whole animals with precision and minimal waste.
Crafting house-made charcuterie, including salamis and sausages.
Preparing cuts of meat for our fine dining menus.
Maintaining a clean and organized butchery area.
Collaborating with the Head Chef to develop new menu items.
The Ideal Candidate:Proven experience as a butcher, ideally within a high-end restaurant or a similar environment.
A strong understanding of whole animal butchery.
Experience in charcuterie production (salami, sausages, etc.) is essential.
A meticulous approach to your work and a passion for quality ingredients.
The ability to work independently and manage your time effectively within a flexible schedule.
